Easy Apple Cinnamon Muffins Recipe

Apple cinnamon muffins made with fresh, tart apples are one of my favorite fall breakfast treats. With just the right amount of cinnamon, these muffins smell and taste like fall. Plus they are so easy to make from scratch.

The Best Apple For Muffins

Fall wouldn’t be fall without apples. Or pumpkins. But I am focusing on apples. At the moment. Granny Smith apples to be exact. Tart, green, firm Granny Smith apples.

Granny Smith apples are my go to for muffins and pies. The flavor and firmness of these apples are perfect for baking.

Recently, I baked an apple crumble pie from scratch. Yes, from  making the pie crust to peeling and slicing the apples. All of it. Oh my, what goodness that was. Why do I wait so long to make apple pie?

Follow these tips for a flaky pie crust. You can make pie crust from scratch. It’s easy and better than store bought.

Well, I had a couple of apples left over from my pie. The apples that didn’t make the cut for the pie. I couldn’t let them go to waste. So, they went into these easy apple cinnamon muffins. Or I could have made my apple loaf cake but the muffins won out.

An Apple Peeler Is A Great Kitchen Tool

I do have a confession to make. I had help peeling and slicing the apples. No it wasn’t in the form of a sous chef.  My daughter refuses to take on that role. It is this little gem of a kitchen gadget. An apple peeler that will also slice and core the apple. I just love kitchen gadgets.

I found this little gem at World Market for $10.00. Bargain, right. It works fabulously.

The apple is inserted onto the prongs and then you turn the handle. The apple is slowly peeled and then sliced into perfect rings.

I then sliced the rings into small chunks before adding to my muffin mixture.

With the help of my apple peeler, I will be making these apple cinnamon muffins more often. They are perfect for breakfast or a mid morning snack. Plus they are great in a lunch box. It’s the little things that make me jump for joy.

The Best Ever Apple Cinnamon Muffins

Equipment

  • 12 cup muffin pan

Ingredients
  

  • 2 cups All Purpose Flour
  • ½ cup granulated sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¾ cup milk
  • cup vegetable oil
  • 1 egg (beaten)
  • 2 small Granny Smith apples (peeled and chopped)

Instructions
 

  • Preheat oven to 400°F.
  • Line a 12 cup muffin pan with paper liners. Or use cooking spray to grease each cup.
  • Whisk together the flour, sugar, baking powder, salt and cinnamon in a large bowl.
  • Add the milk, vegetable oil and beaten egg to the bowl. Stir till just combined. Do not over mix. This will make the muffins tough and chewy.
  • Stir in the chopped apples till just combined.
  • Using an ice cream scoop, fill the 12 muffin cups evenly.
  • Place the pan in the preheated 400°F oven and bake for 20 -25 minutes. Muffins are done when a tooth pick is inserted and comes out with a moist crumb.
