Apple cinnamon muffins made with fresh, tart apples are one of my favorite fall breakfast treats. It just wouldn't be fall without them. Plus they are so easy to make from scratch.
Line a 12 cup muffin pan with paper liners. Or use cooking spray to grease each cup.
Whisk together the flour, sugar, baking powder, salt and cinnamon in a large bowl.
Add the milk, vegetable oil and beaten egg to the bowl. Stir till just combined. Do not over mix. This will make the muffins tough and chewy.
Stir in the chopped apples till just combined.
Using an ice cream scoop, fill the 12 muffin cups evenly.
Place the pan in the preheated 400°F oven and bake for 20 -25 minutes. Muffins are done when a tooth pick is inserted and comes out with a moist crumb.
