The Best Instant Pot Fresh Peach Cobbler
Making Instant Pot fresh peach cobbler is so simple, you could make this dessert every day. With fresh peaches, some brown sugar, a bit of butter and a box of cake mix, you will love this dessert.

The end of summer brings a bounty of fresh peaches. Road side stands begin to pop up in several areas of town. All touting the the sweet delectable flavor that only fresh peaches can deliver.
Peaches from South Carolina and Georgia seem to be the most abundant. Guess peaches don’t grow in Tennessee. I’ll take fresh peaches anywhere I can get them.
Summer just wouldn’t be the same without taking a bite out of a fresh peach, the juices dripping down your chin. Childhood memories back to a simpler time.
Few Ingredients Make A Delightful Dessert
Few desserts use 5 ingredients or less. Much less promise such summer deliciousness. With no promise of leftovers. Instant Pot Fresh Peach Cobbler delivers on all counts. When it was ready, my family devoured it. Yes, every bit. Makes a mom proud.
I can serve this almost guilt free because after all, I am using fresh fruit. Real butter and brown sugar. All pure.
Well, then I have to throw in the cake mix. This is the secret to the quickness of this dessert. I’m not one to use a cake mix for anything. I know. That sounds kinda snobby but really I like to bake cakes from scratch. Anyway, using a cake mix is the best thing to happen to peach cobbler since well you know, sliced bread.

Cobbler Or Dump Cake
I would call this recipe a version of a dump cake but not. Due to cutting in the butter into the cake mix.
And it’s not a true cobbler either. It is more of a steamed cake with peaches.
Besides that, it doesn’t make any less delectable. Nope. Just another instant pot recipe to add to your repertoire. A good summer time recipe.

How To Peel Peaches
One of the caveats of using fresh peaches, is how in the world do you peel the dang things. You can’t use a regular vegetable peeler. The peach skins are too fuzzy.
Step in the boiling water method. This method will work best on ripe peaches.

Place the peaches into a pot of boiling water. Let boil for 20 – 30 seconds. Lift each peach with a slotted spoon to remove from boiling water.
If the peach skin doesn’t remove easily, leave the peaches in for another 30 seconds.
Hint: Get inexpensive large spoons and slotted spoons at Costco. Or any big box store in the catering/restaurant section.

Immediately, submerge the boiled peaches into a bowl of ice water. This stops the cooking process. We don’t want to peel mushy peaches.

The peach skin should easily be removed by your fingers. Or a paring knife which is what I use. As a result, it just helps the process go a little faster.
I then go ahead and slice the peaches, being careful of the peach pit. My peach slicing skills are not the best. The slices end up uneven but that’s okay. No one will ever know.
I add the fresh peach slices to a round metal cake pan (I use the Fat Daddio 7 inch cake pan) that will fit into my 6 quart Instant Pot. Even though the peaches are already sweet, I like to add a bit of brown sugar. A fourth of a cup. That’s all. The molasses flavor just enhances the peaches.
Then I grate around an eighth of a teaspoon fresh nutmeg into the fresh peaches. This adds a hint of spice.
Mix it up well. Spread the cake mix with the butter cut in, over top of the peaches.

Place the metal pan onto the trivet that came with the Instant Pot.
Now that I have the OXO sling, I use that instead of the trivet. This makes removing the pan much easier. Check out my post on Instant Pot accessories to learn more about the OXO sling.
Add 1 cup water to the inner pot of the Instant Pot. Then the lower trivet or OXO sling with the pan into the pressure cooker. Set it and come back when ready.
When the pressure has released, carefully remove the pan from the Instant Pot. Now, it won’t be browned like a regular peach cobbler but it will taste just as good.

A Natural Release
A natural release is when the Instant Pot cools down without using the steam release handle. The steam is released gradually as the Instant Pot cools and the float valve drops down. You don’t do anything with the Instant Pot till the float valve has dropped completely. This can take between 10 – 20 minutes.
A Quick Release
A quick release is when the steam release handle is pointed to venting. The steam is immediately released with steam rapidly emerging through the steam release handle. Do not touch the steam or the steam release handle. The steam is very hot. When the steam has stopped and the float valve is completely down, then you can remove the lid from the Instant Pot.
Sometimes a recipe will state to do a natural release for a specific time then to do a quick release to finish releasing the steam.

Scoop some peach cobbler out onto a plate. Top with vanilla ice cream and DIG IN! A true celebration to summer.

Equipment
- Instant Pot 6 Quart
- 7 inch metal cake pan
Ingredients
- ½ box yellow or white cake mix (or 1 ½ cups)
- ¼ cup butter (cut into slices)
- 4 – 6 medium peaches
- ¼ cup brown sugar
- ⅛ teaspoon nutmeg (optional)
Instructions
- Pour half the box of cake mix into a bowl. With a pastry blender, cut the butter into the cake mix till mixture resembles small peas. Just like a pie crust. Set aside.
- Peel and slice peaches. Place peaches into a round metal cake pan that will fit your Instant Pot.
- Add brown sugar and nutmeg (optional) to peaches. Mix well.
- Spread prepared cake mix crumbles evenly on top of the peaches.For a crispier crust, place aluminum foil on top of the cake pan.
- Place cake pan on trivet that came with the Instant Pot.
- Add one cup of water to Instant Pot inner pot. Slowly lower cake pan with trivet into the pot.
- Place lid on Instant Pot and lock. Set steam release handle to SEALING. Use the high pressure setting.Press the manual button or pressure cook button then set for 10 minutes.
- When the timer is up, do a NATURAL RELEASE for 10 minutes. Then do a quick release allowing the rest of the steam to be released.
- Remove the lid once the float valve is completely down. Carefully remove the cake pan with the trivet out of the Instant Pot. This is very hot. Use hot pads or silicone mitts to protect your hands.
- Let cool before serving. Dish up and top with vanilla ice cream.
- This is best eaten the same day. Store any leftovers in the refrigerator for up to 3 days in a covered container.

This looks so good (and easy)! One of these days I will conquer my fear of Instapots haha…
