How To Make Bread With The Bosch Mixer

 Learn how to make bread with the Bosch Mixer. This mixer is big. Enabling you to make six loaves of bread in one batch of dough.

I have been making my own bread for several years now. There is just nothing that compares to home baked bread. The flavor is fabulous. I had been using my Kitchen Aid stand mixer for mixing and kneading the dough. It performs beautifully. I love my Kitchen Aid. I was only making two loaves at a time which will last our family about a week. This was fine.  I enjoy making bread.

Six Loaves Of Bread

Then I heard about the Bosch Universal Mixer and how it could mix and knead dough for six loaves of bread.

Six loaves of bread. Can you even imagine? I thought about this for weeks. Desperately, I wanted one. I know, I know. Another stand mixer just wasn’t something I needed. Then my sweet mister told me to go ahead and buy it. So I bought one and it is all mine now. Now, I am giddy with excitement. I am such a gadget geek.

All 800 watts of power. I love listening to the motor as it mixes.  Here are the accessories it came with. Wire whisks to mix cake batters, cookie paddles for cookie dough or heavier batters and a dough hook along with an extender for smaller batches of dough. There are other configurations you can get that don’t include the cookie paddles.

How Long Do You Knead Bread In The Bosch Mixer

The Bosch Mixer does such a great job of kneading. With it’s unique method,  you only need to knead one time. Generally, it only takes 8 – 10 minutes for the Bosch mixer to accomplish kneading. You may need additional kneading time. That depends on your flour. The bread dough should be smooth and elastic when the kneading is finished.

Sandwich Bread Recipe

This whole wheat bread recipe makes a great sandwich bread. There is just nothing like biting into a sandwich created with homemade bread. This bread in no way compares to store bought bread. It will bring a smile to your face!

Here are my six loaves cooling on this ingenious cooling rack. This will be enough bread for 3 weeks. I put each loaf in a plastic bread bag and place it in the freezer. Making and freezing bread is healthier since you control what goes into it. Start to finish I spent a couple of hours making this recipe.  A lot of that time was waiting for the dough to rise and then bake. So you can multi task while you are baking.

I don’t think I will ever go back to store bought bread again. Making bread is very simple. Think of the ingredients. Flour, yeast, sweetener, water and oil. Simple ingredients. I hope this inspires you to try making bread. You don’t have to have a stand mixer. Just get in the dough with your bare hands. Very therapeutic.

How To Make Bread With The Bosch Mixer

The easiest way to bake six loaves of whole wheat bread with the Bosch Mixer. This recipe makes soft and delicious bread. Perfect for sandwiches.

Equipment

  • Bosch Universal Plus Stand Mixer

Ingredients
  

  • 6 cups warm water (105°F to 115°F)
  • cup vegetable oil
  • cup honey
  • 2 tablespoons active dry yeast
  • 2 tablespoons salt
  • 3 cups rolled oats not instant
  • 6 cups all purpose flour plus more
  • 6 cups whole wheat flour plus more

Instructions
 

  • Create a sponge to activate the yeast. Add the 6 cups warm water, oil, honey, 6 cups flour and yeast to mixer bowl.
  • Set to speed to 1 and mix till combined. Allow sponge to rise for 30 minutes.
  • Once the sponge has risen to almost the top of the bowl, jog (by setting the mixer to M) to deflate the sponge.
  • Set mixer to speed 1 and begin adding the salt, rolled oats and remaining flour till the dough begins to pull away from the sides of the bowl. At this point, stop the mixer and check how sticky the dough is. You may need to add more flour to the dough. You don’t want the dough to be too wet. Continue to add flour till it is just a bit sticky.
  • Put mixer on setting 2 to begin kneading. This may take about 8 – 10 minutes. You want the dough to be elastic. Pull a portion of dough and it should slowly fall from your fingers without breaking.
  • Divide dough into 6 equal portions. Place in greased loaf pans and let rise till the dough is just above the rim of the pan.
  • Bake in 350° F oven for 30 minutes till bread is golden brown. Insert an instant read thermometer into the center of one loaf. The bread is done when it has reached an internal temperature of 190° F.

  1. Hi, I just found your site… got inspired to try making bread. I got a bosch mixer for Christmas ….love it.
    So I was using the recipe for the oat wheat bread and my question is …is the dough supposed to get warm while kneading in mixer? And if it does will that keep loaves from rising properly?

    1. Hi Katrina,
      The dough is warm from the heated yeast sponge and it maintains that heat throughout the kneading process. I believe that this helps the dough to rise. I have never had a problem with my loaves not rising.

  2. Good Morning Carol….I am getting back into making bread 🙂 I didn’t really need to make 6 loaves at a time…Can you give the proportions for the flours for a 3 loaf recipe? When I halve it myself….I’m not ending up with the correct number (as I watch the video).Thank you!

    1. Not sure what the right proportions are for three loaves. I would have done what you did , halve the recipe. That puzzles me at to why it didn’t work. With the six loaves, have you considered freezing the extra? The bread freezes beautifully.

    1. I should clarify – in your recipe you make a sponge without flour and salt. In your video you make a sponge with flour and then add salt to the rest of the flour used after sponge has risen. Which sponge gives you best results and when should I add salt? Thank you so much!

        Yes, adding the salt along with the rolled oats and remaining flour is best. You don’t want to add salt to the sponge or it will kill the yeast. Salt is added to prevent the dough from over rising.

        I amended the recipe to add 6 cups flour to the sponge. The video is how I make this bread. I hope you have had great success with this recipe.

    I have had my Bosch for 20 years and have never made bread in it. I can’t believe how easy it was. In the midsts if CoVID 19 and the unavailability of bread I decided to make bread today. The recipe turned out great and was so yummy! My kids had half a loaf gone before it even had time to cool! I have always loved my Bosch this just makes me love it more!     This is so good! I must have larger pans, only 4 of them, so I did the math for 4 loaves but think I might try making the 6 loaf recipe for 4 larger loaves next time. Yes, there will be a next time! I made one loaf into cinnamon swirl and both kinds are good, and so easy in the Bosch!

    1. I agree that making bread in the Bosch is so easy. I love to bake more than two loaves of bread and then freezing them. So convenient. Cinnamon swirl bread is one of my favorites!

    I have had other readers make 4 loaves from this recipe using larger loaf pans. The loaf pans I use are
    8.5 x 4.5 x 2.5 inches which is slightly smaller than a standard size loaf pan. I hope this helps! 🙂

  8. So far, I am loving my new Bosch mixer for large recipes and bread making… my only problem is getting the dough out of the bowl. I really struggle with this… any suggestions to help me?

    1. Hi Joyce, get a large plastic bowl scraper. I use one from Ateco. It is rounded on one edge and straight on the opposite side. The rounded edge helps scrape the dough out of the bowl. Hope this helps.

      Another tip I just saw from Chef Brad is to splash/drizzle some extra oil into the bowl over the dough after the kneading is done. I do it just before I’m ready to turn the machine off and let it turn a couple of times around to coat the dough. It will then fall right out of the bowl!

      I’ve been making bread in my Bosch for years, and I skip the whole sponge/first rising part. It still turns out great!

    3. I simply have a little jar with oil for putting on my hands so I can remove the dough and shape it without adding more flour. Works great!

    1. The Bosch does an incredible job of kneading large amounts of bread dough that a second rise is not necessary for this recipe. I’m not sure about other bread recipes. Enjoy your Bosch!!!

  10. Have used my Bosch Universal for 30+ years…………..just now noticed the “add the oil” to the dough before dumping out of the bowl………….great idea.

    However, at this point in time hubby and I have downsized so specifically trying to find a recipe for the Compact ‘Baby’ Bosch…………white bread. If anyone has a specific recipe for this…… would very much appreciate your sharing. Thanks very much………….

Soo I showed her and her family how, useing your recipe. They loved it !! I was looking for your video that help me learn how to made it but I couldn’t find it.     This is to thank you for the lovely recipe and for letting me know about that cool, space-saving rack! I would share a picture of my six loaves on the rack if I could. I used 100% fresh-ground hard white wheat flour, coconut oil, fine Real sea salt, and no AP flour. It created 8.5 lb. of dough for six 1 lb. 7.5 oz. loaves. The dough required a couple extra minutes kneading to get a soft “window” test, had a nice texture, good rise, and domed when baked, resulting in a tender crumb with a slightly sweet taste. The first loaf was gone with only three people helping it disappear in minutes. I highly recommend enjoying this with a bit of butter and raw honey. Delightful! Also, I cook my loaves (at the prompting of another baker) to 175 internal temp, which is perfect! Have a lovely day!

  14. I’ve had my Bosch Universal for 14 years and I love using it for bread, as well as cookies and pie pastry. I use the same recipe for my honey oatmeal bread as you and I’ve made it dozens of times. I add a half cup of cooked seven grain cereal (for flavour and texture) and some tangzhong (for even softer bread and longer shelf life), reducing the amount of water to suit. It is simply very, very good bread.
