Is It Worth It To Own A Dutch Oven

I love to use my dutch ovens. They can go from the stove top to the oven. With this type of pan, I can sear my steaks for the Swiss steak recipe. Then finish cooking them in the oven without dirtying another pan.

Dutch ovens come in many sizes and types of finishes. I like an enameled coated cast iron dutch oven. It’s easy to clean and heats evenly. I have a couple of sizes in this type of pan. The two I use the most often are my three quart and my five and a half quart. These are ones I reach for when cooking for two or the larger size for four or more people.

They’re good for soups, stews, and chilis. And for roasting chicken and chuck roast. Everyday cooking, in general.

The one thing that surprised me about dutch oven cooking is that the lid is not air tight. Liquid still evaporates which is a good thing. The sauces and gravies cook down and thicken. This results in a richer flavor.

The way I see it, owning a dutch oven is completely worth having in your kitchen.

Ingredients Needed

You’ll need the following ingredients to make dutch oven Swiss steak:

  • London broil or round steak – London broil is a bit thicker than round steak but either will do. I used London broil here. I can find both types of meat often on sale.
  • All-purpose flour – This creates a crust when searing the steak.
  • Salt, ground black pepper and paprika – Adds tenderness as well as enhancing the savory flavor of the steak.
  • Olive oil – To brown the steak.
  • Garlic, onion and celery – This vegetable trio creates the seasoning base which adds flavor to the steak. There’s no need to soften the vegetables before adding to the meat. They will roast during the cook time.
  • Canned diced tomatoes – I like to use canned fire roasted tomatoes for extra spice but plain is fine, too. Do not drain the tomatoes. The juice helps to roast the meat.
  • Beef broth – Provides enough liquid to simmer the steak in.
  • Worcestershire sauce – I use this in almost all my beef dishes. It adds a tremendous amount of flavor.

How To Cook Dutch Oven Swiss Steak

  1. After cutting the round steak into four pieces, coat in the flour mixture. Tenderize with a fork or meat tenderizer mallet. Set aside. On the stove, heat the olive oil over medium heat in a dutch oven. Add the flour coated steaks to the pan.

  1. Sear the steaks on both sides until golden brown. Turn off the heat.

  1. Add the remaining ingredients over top of the browned steaks. Place the lid on the dutch oven and put into the preheated oven for one hour and thirty minutes.

  1. When finished cooking, remove from the oven. Beef should be fork tender.

Tips

  • What to serve with Swiss steak?
    • Swiss steak served over mashed potatoes, rice or egg noodles is delicious.
  • No Dutch oven, no problem.
    • This recipe is stove top friendly. You can make this recipe if you don’t own a dutch oven. On the stove, use a skillet to brown the meat and then add the gravy ingredients. Cover the skillet. Turn down the stove heat to simmer and cook till the beef is fork tender.
  • Change it up.
    • I like using fire roasted diced tomatoes but I have also used a can of diced tomatoes with green chilies. The green chilies definitely add a lot of spice. This is a nice change if you’d like to add more spiciness to your meal.

Ingredients
  

  • 1 ½ pounds round steak or London broil
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 medium yellow onion (thinly sliced)
  • ¼ cup celery (coarsely chopped)
  • 1 can fire roasted diced tomatoes with juice (14.5 ounces)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce

Instructions
 

  • Preheat oven to 350°F.
  • Cut the round steak into four pieces. Set aside.
    1 ½ pounds round steak or London broil
  • Combine flour, salt, pepper and paprika in a pie plate. Coat both sides of the steaks in the flour mixture. Tenderize with a fork or meat tenderizer mallet.
    3 tablespoons all-purpose flour, 1 teaspoon salt, ½ teaspoon ground black pepper, ½ teaspoon paprika
  • On the stove, heat the olive oil over medium heat in a dutch oven. Brown steaks on each side until golden brown. Turn off the heat.
    Drain excess oil, if needed.
    2 tablespoons olive oil
  • Add garlic, onion and celery on top of the browned steaks. Pour diced tomatoes with juice, beef broth and Worcestershire sauce over the steaks.
    3 cloves garlic, 1 medium yellow onion, ¼ cup celery, 1 can fire roasted diced tomatoes with juice, 1 tablespoon Worcestershire sauce, 1 cup beef broth
  • Cover the dutch oven with the lid and place into the preheated 350℉ oven to cook for 1 ½ hours or until the beef is fork tender.
  • Serve over mashed potatoes, rice or egg noodles.
