Instant Pot Meatloaf

Meatloaf is one of those comfort foods you wish you had more time to prepare. I rarely cooked meatloaf due to the time it takes to bake in a traditional oven. It needs a full hour and then some plus prep time. Who has time for that on a busy weeknight? Step in the Instant Pot meatloaf recipe.

How Long Does Meatloaf Cook In An Instant Pot

This pressure cooker will cook a one pound meatloaf in 25 minutes. With combining the ingredients, you have a 30 minute meal. Well more or less, with the pressure taking time to build. Winner, winner Instant Pot meatloaf dinner!!

Most people have a favorite meatloaf recipe. One that has been handed down for generations. There always seems to be secret ingredient. What is mine? Chopped green bell peppers. They add so much flavor. Just like eating a stuffed bell pepper but this is simpler. Add green bell pepper to the mix. Delicious.

Use Frozen Green Peppers To Save Time

I use frozen green bell pepper that have already been chopped. This makes it very easy to throw in a recipe. Especially when you are short on time.

If you don’t like green bell peppers, omit them. Or use less. But you don’t know what you are missing if you do.

Instant Pot Meatloaf

I start with 1 pound of lean ground beef. I buy the fresh hamburger patties at Costco. One patty is huge. By buying the hamburger that is formed into patties, I can divide it up into meal sized portions to freeze. Two patties weigh in at a little over 1 pound.

In a large bowl combine beef, chopped onions, egg, bread crumbs, chopped bell pepper, ketchup, salt and pepper.

Now mix it all together. You are supposed to mix it with your hands but I can’t bring myself to do that so I use a spoon. I know, wimpy me. It is mixed better with your hands, too. Maybe one day I’ll mix it right.

Pat the meat mixture into a 7 inch springform pan. I use a 6 quart instant pot, so this size pan fits nicely.

Add two cups water to the Instant Pot.

Place the trivet that came with the Instant Pot inside. Lower meatloaf pan onto trivet.

Place lid on to Instant Pot and lock. Close the steam valve to sealing. Cook at high pressure for 25 minutes.

While the meatloaf is cooking combine ketchup and brown sugar in a small bowl. Set aside.

When the cooking time is finished, do a quick release to release the pressure inside the pot. Remove meatloaf. Run a knife around the edge of the springform pan. As a result, the meatloaf will have lovely crunchy bits on the edge. Remove outer ring.

Check The Internal Temperature Of The Meatloaf

To ensure the meatloaf is done, use an instant read thermometer. Placing the thermometer in the middle of the meatloaf, check the temperature.  The meatloaf is completely cooked at 160℉ .

Adding The Topping

Pour ketchup and brown sugar mixture on top of cooked meatloaf. Place meatloaf on a cookie sheet. You  could leave the bottom of the springform pan on. That’s up to you. I do. Place meatloaf under the oven broiler till the ketchup topping is bubbling. Keep a close eye on this. You don’t want it to burn.

Another thing I like about making instant pot meatloaf this way aside from the timesaving is how easy it is to portion. I simply cut it into quarters. This is the perfect size for 4 adults.You could probably slice it thinner. However, I like the four serving size.

This recipe makes my husband very happy. He loves meatloaf. Now with the Instant Pot meatloaf recipe, I like it almost as much as he does.

Ingredients
  

Meatloaf

  • 1 pound lean ground beef
  • 1 small onion chopped
  • ¼ cup chopped frozen bell peppers
  • 1 egg
  • 1 cup bread crumbs
  • ½ cup ketchup
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Topping

  • ½ cup ketchup
  • 2 tablespoons light brown sugar

Instructions
 

  • Place all meatloaf ingredients in a large bowl. Mix well.
  • Pat meatloaf into the 7 inch springform pan.
  • Add two cups of water to the Instant Pot. Place the trivet inside the pot.
  • Lower the meatloaf into the pot.
  • Lock the lid onto the Instant Pot. Point the steam valve to sealing.
  • Set the Instant Pot on manual for 25 minutes at high pressure.
  • Once the timer beeps, release the pressure from the Instant Pot using a quick release. Once the float valve has dropped, remove the lid.
  • Carefully remove the meatloaf with the trivet from the pot. Check the meatloaf for doneness with an instant read thermometer to make sure the internal temperature is 160° F. Place the thermometer into the middle of the meatloaf to get an accurate reading.
  • Run a knife around the edge of the spring form pan before releasing meatloaf. Remove outer ring.
  • Place meatloaf onto a cookie sheet.
  • Combine the ketchup and brown sugar topping in a small bowl. Pour over the meatloaf.
  • Place the meatloaf under the oven broiler until the topping bubbles. Don't leave it too long or it will burn.
  • Remove the meatloaf from the broiler.
  • Slice and serve.

    1. The good thing is the grease flows into the water in the Instant Pot when you use a springform pan. Another plus for using the Instant Pot. Also make sure you are using LEAN ground beef. I like to use the leanest I can find.
