Cranberry orange pecan bread is a delicious holiday quick bread. Topped with an orange glaze makes this is a special and delicious treat.
This quick bread is packed with cranberries and orange juice for a perfect balance of tart and sweet. A lovely bright and cheery quick bread. Makes a great gift for the holidays.

How To Make Cranberry Orange Pecan Bread
Quick breads are simple to mix and this recipe is no exception. The only prep is to zest a large orange, slice the cranberries and chop the pecans. Then all you do is add ingredients and stir. So very easy.

- Mix the buttermilk, egg, vegetable oil, granulated sugar, orange juice and vanilla extract together in a large bowl.
- Add the whisked dry ingredients to this mixture. Stir till combined.
- In a small bowl, toss the fresh sliced cranberries in one tablespoon of flour to coat.
- Add the cranberries and pecans to the batter.

- Fold the sliced cranberries and chopped pecans into the batter till combined.

- Pour the batter into a greased 9 x 5 inch loaf pan. Bake at 350℉ for 50 minutes or until done.
Adding The Glaze
This quick bread uses a simple glaze of orange juice and powdered sugar. The orange juice adds just the right amount of flavor to this glaze.
Mix two tablespoons of orange juice to one cup of powdered sugar in a small bowl. You may need another tablespoon of orange juice to get the glaze to drizzling consistency. Once you have the glaze prepared, slowly drizzle over the cooled bread with a spoon. Pool it over the top and watch it drip down the sides. So, pretty to see. And it’s done.
Allow the icing to dry before slicing the bread.
How To Store Cranberry Orange Pecan Bread
- Once completely cooled, store in an airtight container at room temperature for up to three days.
- This bread can also be frozen for up to three months. Wrap the bread in plastic wrap then place in a freezer bag. Be sure to label and date the freezer bag.

Ingredients
Bread
- 2 cups all-purpose flour (plus 1 tablespoon)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- orange zest from 1 large orange
- 1 cup granulated sugar
- ½ cup buttermilk
- 1 large egg
- ¼ cup vegetable oil
- ½ cup orange juice
- 1½ cups fresh cranberries (sliced in half)
- ½ cup pecans (chopped)
Glaze
- 1 cup powdered sugar
- 2-3 tablespoons orange juice
Instructions
- Preheat oven to 350° F. Grease a 9 x 5 inch loaf pan with non stick cooking spray.
- To prevent the cranberries from sinking in the batter, toss the sliced cranberries in one tablespoon of all purpose flour till coated in a small bowl. Set aside.
- In a medium size bowl, whisk together the 2 cups all-purpose flour, baking powder, baking soda, salt and orange zest. Set aside.
- In a separate large bowl, mix the granulated sugar, buttermilk, egg, vegetable oil and orange juice together.
- Add the flour mixture to the wet ingredients. Stir till just combined. Do not over mix. This could result in a dry bread.
- Fold in the sliced cranberries (coated with flour) and chopped pecans to the batter.
- Pour the batter into the greased 9×5 inch loaf pan.
- Bake in a 350° F oven for 50 minutes. Bread is done when a toothpick inserted into the middle comes out dry. If not done, continue baking in icrements of 5 minutes. Do not over bake. This will dry out the bread.
- Cool in the pan for 10 minutes. Then turn out onto a wire rack to finish cooling.
Glaze Instructions
- Whisk together the powdered sugar and two tablespoons orange juice. You may need to add another tablespoon of orange juice for desired consistency.Spoon over the cooled bread.
