Teriyaki chicken has been a favorite of mine forever. It is my favorite dish to order whenever we go out to eat. Teriyaki flavor is so delicious. Try as I can, I just cannot seem to get the same flavor when I make it at home. However, I have found a quick and easy dinner that takes just as good as restaurant teriyaki chicken. 30 Minute Teriyaki Chicken stir fry. The good news is all the ingredients are from Costco.
Going to shop at Costco is a weekly expedition for my mister and me. Granted, we could stock up once a month but going weekly suits us better. We generally spend around one hundred dollars there per week.
We buy all our meat there. You just can’t beat the price. Especially on the frozen chicken breasts. We buy the fresh ground beef that is in patties. Those patties are really big. Package two patties in a freezer bag to be frozen. Then when we need ground beef for a meal such as tacos or chili, we use one bag. Buying the ground beef in patties helps us to portion it out.
We discovered Costco frozen sir dry vegetable blend. Lots of delicious vegetables. One dinner later and we’re hooked. It is so good and flavorful. Just heat and eat. Who could ask for easier? This is the base for my chicken teriyaki stir fry.
You can’t have 30 minute teriyaki chicken stir fry without a fantastic sauce. Another Costco find. Veri Veri Teriyaki in a bottle. This is the best teriyaki sauce in a bottle that I have ever had. There is no need for additional seasoning with this. Some store bought sauces need a little help to make them flavorful. Not this one. We like it straight from the bottle. Now if you don’t have Costco near you or you are not a member, this sauce is sold at the grocery stores.
30 Minute Teriyaki Chicken Stir Fry
Here’s my recipe for 30 Minute Teriyaki Chicken stir fry. It’s hard. Just kidding. It only used 3 ingredients. Can you believe that? This serves 3 -4 people depending on portion size.
- 2 chicken breasts, defrosted if using frozen
- 1/4 bag Costco stir fry vegetable or 1 bag from the grocery store.
- 1 cup Veri Veri Teriyaki sauce
Chop chicken breasts into bite size pieces. Add one tablespoon olive oil to frying pan. Heat pan. Add chicken pieces. Cook chicken till no longer pink.
Drain pan from any juices. Add frozen vegetables. Cook till desired tenderness.
Drain pan again from any water from the cooked vegetables.
This teriyaki sauce has lots of sesame seeds which float to the top of the bottle. Try to shake the bottle well before pouring if you can. We were’t too successful. Love those sesame seeds, though.
Add teriyaki sauce. Cook till heated.
Don’t overcook. Everything else is already done. So the sauce just needs a little heat.
If you find that the sauce is too watery, add a teaspoon of corn starch. This will thicken the sauce nicely. Corn starch mixes easily into the sauce without adding it to water first. No lumps either.
Using my Le Creuset braiser, makes cooking and clean up simple and fast. Love these cast iron pans. Anytime you are at an outlet mall, see if there is a Le Creuset shop there. They sell seconds which make these pans much more affordable. This braiser is a second due to some nicking of the paint on the outside. It hasn’t affected the performance at all. This the perfect size pan for frying anything.
You could serve this 30 Minute Chicken Teriyaki Stir Fry over brown rice. I just spooned some into a large bowl. It is so good.With or without rice.
