Minestrone soup. It is thick and hearty. Warm with just a touch of spiciness. A meal all by itself. Enough said. Well, almost.
I wasn’t always a fan of soup. A meal of soup with a hunk of bread thrown in for good measure. That’s not filling. Give me some meat and potatoes. Soup is just a thin broth with a few vegetables with maybe a bit chicken. Right?
What? Wait a minute. There’s a chunk of crusty, chewy bread with that soup? All right, slide that bowl over here and I’ll give it a try. But hey, don’t forget that hunk of bread.
And with that bowl my friend, I was sold.
That was the beginning of my love affair with soup. But it has to be a thick soup. No, thin broths for me.
Minestroni is one such soup. I have the recipe for it.
30 Minute Minestrone Soup Ingredients
To be honest, minestrone soup doesn’t need a recipe per se. Toss a couple cans of beans and tomatoes, some frozen veggies, chicken stock, noodles, and spices. Ingredients that are probably already in your pantry. If not, they should be.
You are good to go. Easy, easy. 30 minute easy.
My Favorite Dutch Oven
Now you don’t need a fancy dutch oven or stock pot to make soup. Just a pot that is large enough to hold your ingredients with room to spare. So nothing boils over on to your clean stove while you aren’t looking. Hey, it happens.
I have fallen hard for Le Creuset pots. I mean hard. They heat evenly, are easy to clean up. They are beautiful to look at. What more can you ask for? So when I started making soup a lot I had to have this 6 quart baby.

Just be sure to season the Minestrone Soup properly. The noodles have no flavor so they need salt. Taste and season. Taste and season like the professional chefs do.
Now go ladle some soup into large bowls. Don’t forget the crusty, chewy bread to sop up all the liquid goodness so you don’ miss a drop.
