Barbecue chicken is my go to easy week night dinner. The best part is, it is delicious. Chicken is inexpensive, too. A win-win in my book. You don’t even need a grill. Just your oven. I cook chicken in the oven all year long. It is just easier. Sometimes it is just too hot or cold to grill. Although we have been known to grill in the snowy winter. Don’t judge.
Easy Barbecue Chicken
All you need is chicken breasts, seasoning, your favorite bottled barbecue sauce and a covered oven safe pan. Try as I might I don’t always remember to take out the chicken from the freezer in the morning. I like to buy the individually wrapped frozen chicken from Costco. Not to worry if you don’t remember either. I just cook my chicken from frozen.
Preheat the oven to 350°F. Plop the chicken breasts into the oven safe pan. Sprinkle the seasoning on top. I discovered this Chipotle Spicy Rub from Williams Sonoma. It isn’t too spicy but gives just the right amount of flavor to the chicken. Then cover the pan and place into the oven for 30 minutes. This allows the seasoning to absorb into the chicken. After thirty minutes, remove the pan from the oven. Liberally spread your favorite barbecue sauce over the chicken breasts. Hey, I started with Chipotle and I am ending with Chipotle. I am loving Sweet Baby Ray’s Honey Chipotle Barbecue Sauce. Cover the pan again and place back into the oven. Cook for an additional 15 – 30 minutes or until chicken is no longer pink inside. Chicken should be at 165°F. That’s it.
My Favorite Pan
Within the last couple of years, I have discovered Le Creuset cast iron pans. Oh my. This pan creates juicy meats when placed in the oven. The pan heats up and retains moisture beautifully when covered. Put this on your wish list. I use mine more than any other pan I own. If you live near an outlet or are visiting, check out the Le Creuset stores for irregulars. There may be a cosmetic blemish but you will save dollars on one. Granted they are pricey but worth it.
Here is the finished chicken still in the juices. It is moist, flavorful and delicious.
Use the extra juice spooned over rice or mashed potatoes. Yum. Hope you enjoy this quick and easy chicken.
