Banana pudding disappears in my house in a matter of minutes. I make it from scratch, no boxed pudding mix here. Pudding itself is really easy to make and doesn’t take that much longer than the instant pudding mix. But you can taste the difference.
The ingredients are:
3 tablespoons all purpose flour
1 1/3 cup sugar
1/8 teaspoon salt
3 egg yolks
3 cups milk
1 teaspoon pure vanilla extract (do not use imitation vanilla)
1 box vanilla wafers
4 – 6 bananas
In a 3 quart sauce pan or medium size, add the flour, sugar and salt. Whisk together. Next add the egg yolks and milk. Whisk all together. On medium heat, constantly whisk the mixture until it comes to a low boil, just until it starts to bubble. You want it thick. Remove from heat. Add the vanilla. That didn’t take long.
In a large dish, layer the wafers on the bottom, then a layer of sliced bananas followed by a layer of pudding. Continue for two more layers or until you run out of pudding. Crush some wafers and spread on top of the pudding. Done!!
Sometimes I will do individual cups of pudding. Garnish with a slice of banana and a wafer. Good for entertaining. This is an easy dessert.
