Fresh peaches are delicious. Perfect for some quick desserts. I had thought about making a peach cobbler but I didn’t have enough baking mix for the topping. I did have oats. So a fruit crisp was a go. I just put all the ingredients in the food processor to mix except the peaches. Easy, easy!
You will need:
4 peaches peeled and sliced
1 tablespoon lemon juice
2/3 cup brown sugar
2 tablespoon all purpose flour
1/3 cup old fashioned oats
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 stick of butter
1/4 cup of pecans
Place the peaches in a greased 8 inch square baking dish. I used a 9 inch deep dish pie plate. Add the lemon juice over the peaches.
Put remaining ingredients in the food processor bowl. Process until the butter is cut into the mixture. It should be coarse not fine. So don’t over do it. If you don’t have a food processor, the butter can be cut in with a pastry blender or two knives. Also the pecans should be chopped if doing without the food processor. Still very easy.
Pour the crumb mixture over the peaches. There is enough topping that the peaches should be covered. Bake in a 350 degree oven for 30 minutes or less if the topping starts to brown. Use your nose to let you know when to start checking.
Remove from oven and let cool. The fruit juices need time to firm up or they will run all over. When cool scoop some into a bowl and top with vanilla ice cream. Great summer treat!
